Dakgalbi is a one-pan Korean dish of chicken, cabbage, sweet potato, and rice cakes cooked in a gochujang sauce. It is closely associated with Chuncheon, where iron-plate cheolpan dakgalbi and charcoal-grilled sutbul dakgalbi coexist. This home recipe follows the familiar iron-plate style and ends with fried rice in the remaining sauce.

Why the Dish Matters
VISITKOREA identifies Chuncheon as the dish’s center and describes the standard iron-plate version as chicken with cabbage, sweet potato, onion, and green onion. Sharing from a wide pan—and turning the remaining sauce into bokkeumbap—makes cooking part of the meal.
Ingredients
Chicken and vegetables
- 600 g boneless skinless chicken thighs, cut into 4 cm pieces
- 300 g cabbage; 200 g sweet potato; 1 onion; 1 carrot; 2 green onions
- 150 g Korean rice cakes, soaked if firm
- 1 tbsp neutral oil; 60 ml water
Sauce
- 3 tbsp gochujang; 1½ tbsp gochugaru; 2 tbsp soy sauce
- 1½ tbsp rice syrup or honey; 1 tbsp mirin
- 1 tbsp minced garlic; 1 tsp grated ginger
- 1 tsp sesame oil; ¼ tsp black pepper
Fried-rice finish
- 2 cups cold cooked short-grain rice
- ½ cup chopped kimchi; 1 sheet roasted seaweed; 1 tsp sesame oil
Chicken breast works but dries faster; use any firm sweet potato and honey for rice syrup. Do not replace gochujang with sriracha alone because it lacks fermented depth.

Step-by-Step Instructions
1. Marinate
Whisk the sauce. Toss chicken with two-thirds and refrigerate 30 minutes; reserve the remainder separately.
2. Start sturdy vegetables
Heat a wide skillet over medium-high. Add oil, sweet potato, carrot, onion, and half the water. Cover 4 minutes.
3. Cook chicken
Add chicken in one layer and stir until the outside loses its raw color.
4. Finish the pan
Add cabbage, rice cakes, green onion, and reserved sauce. Cook 8–10 minutes, stirring often. Add water by the tablespoon if scorching begins.
5. Verify safety
The thickest chicken pieces must reach 74°C / 165°F. The sweet potato should be tender and the sauce glossy.
6. Make bokkeumbap
Remove most of the dakgalbi. Stir rice and kimchi through the sauce for 3–4 minutes; finish with seaweed and sesame oil.

Safety, Serving, Variations, and Storage
Keep raw chicken and utensils away from ready-to-eat food. Marinate refrigerated; discard raw-contact sauce unless it cooks fully. Refrigerate leftovers within two hours in shallow containers, keep 3–4 days, and reheat to 74°C. Serve with lettuce, garlic, or cucumber. For milder heat reduce gochugaru first; perilla leaves or mozzarella are optional variations.
FAQ
Does dakgalbi use ribs?
Despite galbi in the name, the common iron-plate dish usually uses boneless chicken.
Are rice cakes required?
No. Increase cabbage or sweet potato instead.
Why is the sauce burning?
Gochujang and sweetener scorch easily; lower the heat, stir, and add a little water.
Can I use chicken breast?
Yes. Cut evenly and stop cooking once it reaches a safe temperature.
